Pear, almond salad with tangy Mustard dressing

Pear Almond Salad

mixed organic greens
peppercorn goat cheese
1 ripe pear peeled and sliced
1/2 red onion
1/2 cup almonds sliced
1/2 cup of Chardonnay
1 teaspoon brown sugar
a sprinkle of cinnamon

In a frying pan, dry roast 1/c cup of sliced blanched almonds.  When slightly browned at 1/2 cup Chardonnay, brown sugar and cinnamon.  Cook until all liquid is gone and almonds crispy.  In a salad bowl mix together lettuce, some peppercorn goat cheese, sliced ripe pear, red onion, and top with toasted almonds.

Tangy Mustard Salad Dressing

2/3 cup olive oil
1/3 cup apple cider vinegar
a splash of white balsamic vinegar
1 teaspoon honey
2 tablespoons Dijon mustard
1 tablespoon honey mustard
salt and pepper to taste

mix and serve

Dinner

Good evening,


It was another beautiful day in Toronto.  I went and completed my grocery shopping with my neighbour and friend.  The kids and I went for a bike ride.  When we returned home we ate dinner.  For dinner, I finished up my tuna salad from lunch, with the balsamic vinegar salad dressing.  On a baguette, I added tuna and peppercorn goat cheese.  I also ate some heirloom tomato with salt and pepper.  Heirloom tomatoes have a refreshing taste and there are so many kinds.  I was eating a brandy wine.  You can purchase heirloom tomatoes at local grocery stores, organic stores and farmers markets.  Heirloom means that they have been passed down for generations.

Raw Beet and Carrot Salad

Enjoyed dinner with a friend...made raw beet and carrot salad, Green Leaf Salad and European Sea Bass, Oyster mushrooms sautéed with Onions, Garlic and Ginger served over quinoa.  This is my recipe that I made up while making the salad.

Raw Beet and Carrot Salad


1 red beet peeled and sliced finely
1 rainbow beet peeled and slice finely
1 yellow carrot peeled and slice finely
1 orange carrot peeled and slice finely
3 tablespoons olive oil
3 tablespoons apple cider vinegar
1/2 teaspoon grated fresh ginger
1/4 cup OJ
1/2 lime squeezed
1/2 lemon squeezed
2 tablespoons maple syrup
1/4 cup cilantro chopped

sliced finely as if grated, mix all ingredients in bowl and allow to marinate for an hour.
garnish with small amount of extra cilantro



 My salad was mixed greens with fresh cranberries and strawberries and topped with peppercorn goat cheese.  I used same mustard dressing.
