Green Pea Soup with Ham

I am having trouble with my children eating food.  This was an attempt at getting them to try new things.  It is sweet and salty.  Delicious and easy to make.  I also used left overs, ham the night before.  I am also working on my photography, thanks for everyone's suggestions and support.



Green Pea Soup with Ham

-1 tablespoon extra virgin olive oil
-1 large onion
-1 cup sliced carrots
-3 cloves garlic
-1 bay leaf
-900ml of broth (I used vegetable broth)
-3 cups frozen peas
-pepper
-ham

In a large pot sauté onions of medium-low heat until soft, about 15 minutes.  Add the broth, carrots bay leaf and garlic.  This soup is puréed so chopping garlic isn't necessary.  Allow to cook until carrots are soft.  Heat the ham slightly in the oven.  Ad the peas can cook soup for another 15 minutes then purée, top with ham and fresh pepper.

Chocolate Orange Caramel Pineapple Glazed Ham

Chocolate Orange Caramel Pineapple Glazed Ham




-1 ham (I was cooking for a crew of people)
-1 pineapple cored and sliced
-the juice and zest on 1 orange
-1 cup of chewy caramels (plastic removed)
-1 dark chocolate bar
-1 milk chocolate bar

Place caramels and the juice and zest of the orange on the stove on low heat and begin to melt the caramels, stir frequently.  Meanwhile slice the pineapple, and get the oven preheating at 350.  Place the ham in a casserole dish.  (cooking for about 45 minutes, less if precooked ham).  In a pot melt the dark chocolate.  Once the caramels have melted and the sauce is thick pour over the ham and pineapple.
Baste the ham with the caramel while it cooks.  Once the ham is cooked, allow to cool.  Pour the dark chocolate over, followed by drizzling milk chocolate over the dark chocolate.

Serve chilled.

Orange Pineapple Mustard Rum Glazed Ham

This had amazing flavour!

2 tablespoons Grain Dijon Mustard
2 tablespoons maple smoked mustard
1 oz dark rum
4 tablespoons brown sugar
Zest and Juice of 2 oranges
1 fresh pineapple chopped
the ham

-mix the mustards, rum, brown sugar, zest and juice of orange juice together.  You want it to be thick, so you may need to add more brown sugar.  Slice the pineapple and place over the ham.  Bake in the oven at 350 for about an hour (depending on size).  If I had a roasting pan I would have used, but my dutch oven helps me to accomplish everything.

Orange Pineapple Mustard Glazed Ham

Last night I made mango salsa which has fresh pineapple in it, so I wanted to use it up today.  I bought a ham, scored it to allow the flavour to infuse into the ham.  I also have had it marinating for the few hours

Orange Pineapple Mustard Glazed Ham

-ham scored (fine slices to allow the flavour to infuse)
-1/2 fresh pineapple chopped
-1/2 cup orange juice
-3 tablespoons brown sugar
-1 tablespoon Dijon mustard

Place ham in dish a casserole dish, add chopped pineapple around the ham.  Make sure to finely score the ham to allow the glaze to get into the ham.  In a small bowl mix the brown sugar, orange juice and mustard and pour over the ham.  Bake at 350 for 40 minutes, with lid.  Take the time to re-glaze while cooking.  The pineapple is so delicious in the orange mustard glaze.

Ham in a Maple Mustard Pineapple glaze

Tonight's dinner I bought a little ham, I scored the ham to allow the glaze to seep into ham.


Glaze


1 oz 1919 rum
3 tablespoons maple syrup
3 tablespoons smoked mustard
1 tablespoon olive oil
1/2 small pineapple in chunks


I covered in glaze let sit overnight and baked in an oven for 40 minutes.
