Maple Mustard Glazed Sweet Potatoes with Pineapple
-2 tablespoon olive oil
-1 large sweet potato
-1/8 cup of maple syrup
-6 tablespoons of maple or honey mustard
-1 cup fresh pineapple diced
-in a large bowl combine 1 tablespoon of olive oil with sweet potatoes until all sweet potato is coated in oil. Line a cookie sheet with parchment paper. Preheat oven to 375. Spread out the sweet potatoes on a cookie sheet and bake for 15 minutes and then turn over. Mix the remaining olive oil with the maple syrup and mustard, set aside. Add the pineapple and baste the sweet potatoes and the pineapple and bake for another 15 minutes, turn over and baste the other side with the mustard maple marinade and bake for another 15 minutes. Allow to cool and enjoy.

Poppy Seed Veggies with Pomegranate and mustard sauce
Poppy Seed Veggies with Pomegranate and Mustard Sauce
-1/2 red onion sliced
-1 zucchinni sliced
-1/2 sweet potato
-3 beets cooked and sliced
-2 tablespoons poppy seed
-different greens (kale, beets greens, collards etc)
-1/2 pomegranate
In a frying pan and add olive oil, once warm add onions and sweet potatoes, zucchinni. Cook until they are browned. (already have the beets cooked, peeled and sliced). Once they are all browned, add poppy seeds. Then add the greens and continue to stir. Place in a bowl and top with pomegranate.
Mustard Maple Sauce
-3 tablespoons of olive oil
-1 tablespoon apple cider vinegar
-1 teaspoon Dijon mustard
-salt and pepper
-1 tablespoon maple syrup
-juice of half a lemon
Mix and top on salad.

Maple Rum Glazed Salmon
Maple rum Glazed salmon
-1 oz rum
-1 teaspoon dijon mustard
-1 teaspoon maple mustard
-2 tablespoon brown sugar
-2 tablespoons olive oil
-salt and pepper
-lime juice
I mix together above ingredients and rubbed into the salmon. I cooked in the oven at 425 for 15 minutes. (my salmon was thick). It was amazing.
-1 oz rum
-1 teaspoon dijon mustard
-1 teaspoon maple mustard
-2 tablespoon brown sugar
-2 tablespoons olive oil
-salt and pepper
-lime juice

Pomegranate and Avocado Salad
Pomegranate and Avocado Salad
Tonight I made an incredibly fresh salad. In fact it was incredible that I had to eat the whole
bowl of salad. The fresh key lime on top of the avocado mixed with the tartness
of the pomegranate, the fresh spinach and the amazing mustard dressing.
-spinach
-avocado
-1/2 pomegranate
-carrots
-purple onions
-the juice of 2 key lime
-salt and pepper
-Place baby spinach in a bowl, add chopped carrot and onion.
Remove seeds from pomegranate and place on top of salad.
In small bowl cut up avocado, dash with salt and pepper and the juice
of 2 key limes.
Mustard Dressing
-1/4 cup olive oil
-1/8 cup balsamic vinegar
-2 tablespoons maple syrup
-2 tablespoons maple syrup
-1 tablespoon smoked mustard
-1 tablespoon maple mustard
-1 tablespoon dijon mustard
-salt and pepper
mix together in a measuring cup...I taste as I go and add more
or less, accordingly. This is a thick dressing and it was incredible with the
lime juice, the pomegranate and the avocado.
Was a treat for my taste buds.

Salad dressing
Just walked over to the healthy butcher, where I bought several types of mustard to make a salad dressing for dinner tonight...they sell a Canadian Mustard called Kozlik's. I love to eat the mustard just on pretzels.
My salad dressing for tonight
2 part olive oil
1 part white balsamic vinegar
1 tablespoon maple mustard
1 teaspoon smoked mustard
1 scallion grated
half a lemon juice
lemon zest
salt and pepper
and a splash of real maple syrup
mix together and keep refrigerated
