This salad is quick and easy. It had the sweetness from the sweet potato and the apple, the spiciness from the onion, the crunch from the red pepper and celery. The freshness from the lime.
Sweet Potato, Zucchini and Apple Slaw
-1 cup grated raw sweet potato
-1 cup grated zucchini
-1 red delicious apple grated
-1/4 cup grated red onion
-1 rib of celery finely chopped
-1/4 cup red pepper chopped
-2 teaspoons apple cider vinegar
-2 tablespoons raisins optional
-3 tablespoons high quality extra virgin olive oil
-the juice of 1 lime
-salt and pepper
-Mix all the ingredients together in a bowl. Stir well and serve. The salad does need a touch of salt, so make sure you add some even

Curried Orange Lime Carrot Soup
Curried Orange Lime Carrot Soup
-1 tablespoon olive oil
-2 onions chopped
-4 cups carrots peeled and chopped
-1 cup sweet potato
-1 clove of garlic
-3 teaspoons red Thai chili paste
-juice and zest 1 lime
-juice and zest of 1 orange
-900ml broth
-1 can coconut milk
-1/2 teaspoon chili powder
-1 teaspoon fresh ginger
-cilantro to garnish
-in a large pot cook onions on medium heat in olive oil until transparent then add garlic. Add broth, carrots and sweet potato and allow to simmer, once soft add Red Thai curry paste and chili powder, zest and juice of the lime and the orange and ginger. allow to simmer and add coconut milk. Once cooked purée and top fresh cilantro.

BBQ Sweet Potato Bake
BBQ Sweet Potato Bake
-2 large sweet potato chopped
-1 red pepper chopped
-2 onions chopped
-2 cloves of garlic chopped
-3 ribs of celery chopped
-1 tablespoon chili powder
-juice of 1/2 an orange
-1 cup beer
-1 cup of broth
-1 teaspoon of thyme (fresh)
-1 cup of BBQ sauce. (I used a chipotle)
-salt and pepper
Chop all vegetables and place in a casserole dish. Preheat oven to 400. Mix all ingredients together. and cover with a lid. Allow to cook for 45 minutes.
This had incredible flavour.

Chorizo Sausage Soup
This was tasty but may be too spicy for some. The sausage was bought at the healthy butcher on Queen here in Toronto. This sausage

-1 large Spanish onion
-6 chorizo sausage casing removed
-1 sweet potato peeled and chopped
-3 potatoes peeled and chopped
-1/2 turnip peeled and chopped
-4 roma tomatoes
-1 litre broth (I used organic beef broth)
-1 cup white wine
-1 tablespoon chili powder
-1 teaspoon cumin
-1 teaspoon fresh thyme
-1 teaspoon pepper
-dash of salt
-1/2 cup brown rice
In a large pot or Dutch oven add the sausage and onions. Allow to cook until onions are soft and clear. Then add the broth, the sweet potato, turnip, potato and roma tomatoes. Add the spices, you may add half the amount if you prefer less spicy. once the potatoes were soft and cooked, then add the wine and rice. Allow to simmer until rice is cooked. I cooked this for 2 hours.

Poppy Seed Veggies with Pomegranate and mustard sauce
Poppy Seed Veggies with Pomegranate and Mustard Sauce
-1/2 red onion sliced
-1 zucchinni sliced
-1/2 sweet potato
-3 beets cooked and sliced
-2 tablespoons poppy seed
-different greens (kale, beets greens, collards etc)
-1/2 pomegranate
In a frying pan and add olive oil, once warm add onions and sweet potatoes, zucchinni. Cook until they are browned. (already have the beets cooked, peeled and sliced). Once they are all browned, add poppy seeds. Then add the greens and continue to stir. Place in a bowl and top with pomegranate.
Mustard Maple Sauce
-3 tablespoons of olive oil
-1 tablespoon apple cider vinegar
-1 teaspoon Dijon mustard
-salt and pepper
-1 tablespoon maple syrup
-juice of half a lemon
Mix and top on salad.

Pineapple & Sweet Potato Quinoa with roasted almonds
Had my friend over for dinner the other night. I had just finished working a 12 our shift, she brought Salmon skewers which she had purchased at St. Lawrence Market. I whipped up this dish in about 5 mins of prep and 20 minutes cooking time.
Pineapple and Sweet Potato Quinoa with Roasted Almonds
-1 cup quinoa
-1 1/2 cups water
-1/2 fresh pineapple chopped with juice
-1 medium sweet potato cubed
-1 tablespoon brown sugar
-1 teaspoon soya sauce
-1 teaspoon yellow Thai curry powder
-1. teaspoon cinnamon
Roasted Almonds
-1/2 cup blanched sliced almonds
-1/3 cup of Chardonnay or white wine
-1 teaspoon brown sugar
-sprinkle of cinnamon
In a pot add water, quinoa, pineapple, sweet potato, brown sugar, soya sauce, Thai curry, and cinnamon. Cook on high until boiled then cover and reduce heat cook for 20 minutes. Stir occasionally. While cooking the quinoa in a frying pan on medium heat add almonds when starting to brown add the rest of the ingredients, allow to cook until the liquid reduces and almonds are dry and crunchy.When quinoa is cooked taste...you may want to add a touch more soya sauce, then cover with the roasted almonds. Then serve.
