Nectarine and Veggie Salad

This salad has an interesting combination of fresh and delicious ingredients, the lime with the tomatoes and nectarines tastes amazing.



Nectarine and Veggie Salad
serves 4
prep 10 minutes

-3 nectarines sliced
-1/2 cup red onion
-2 cups cherry tomatoes (red/orange/yellow) sliced in half
-2-3 avocados sliced
-juice of 2 limes
-4 tablespoons hemp seeds
-sea salt (as desired)

-place the nectarines and avocado in a bowl, squeeze lime over and sprinkle the sea salt,then mix well.  Add the onion and tomatoes and serve.  Sprinkle with the hemp seeds.

I have been eating a lot of hemp seeds, they are high in Omega 3 and 6, protein, vitamins and minerals.  They taste great and have a nice crunch.

Pan fried Veggie

Pan Fried Veggies

-2 tablespoons olive oil or butter
-2 red onions chopped
-2 portabello mushrooms
-2 zucchini chopped in coins
-2 cloves of garlic
-2 ribs of celery
-1 red pepper
-1 tablespoon chili powder
-1/2 cup red wine
-1/2 cup beef broth
-salt and pepper
-2 tablespoons parmesan cheese

In a frying pan add oil on medium heat.  Cook portabello mushrooms until browned.  Then add onions, celery, garlic, red pepper.  Keep stirring, when onion is cooked add the zucchini and pan fry.  Once they start to cook add the wine, chili powder, broth, salt and pepper.  Allow to cook until the liquid starts to boil away.  Add parmesan cheese and serve.

Four layer black bean dip

So tonight my kids want tacos.  Which is one of my favourite memories as a child.  Now every family makes tacos differently, my family had a few traditions and people are surprised that we eat our tacos with olives.  I also grew up with this notion that tacos can only be served with coca-cola.  As a child my family (there are four kids) would all have a responsibility.  When I reflect back on the making of the tacos, it was when we worked efficiently together.  Tonight I am planning on making a refried black bean four layered dip.  


I have been soaking the black beans since last night...I will boil them....and fry them, add ingredients, and place on the bottom of a tray.  I will top with a layer of sour cream, the next layer will be home made salsa, and then cheddar cheese.  Which I will serve with tortilla chips


I have also made my salsa...I have never made fresh salsa before.  I walked over to Chinatown with my daughter and bought some roma tomatoes.  Her and I chopped the tomatoes, added salt and pepper, added red onions.  garlic, red pepper, vinegar, fresh cilantro and parsley, and a dash of chili powder
