Almond Coconut Crusted Tilipia

Tonight I made an amazing fish dinner.  I had bought tilipia yesterday at St. Lawrence market, knowing that my good friend was coming for dinner tonight.  I wanted to make my mom's mango salsa for dinner as well as it is delicious with fish. I made almond coconut crusted tilipia.  So amazing.

T's Almond Coconut Crusted Tilipia with Mango Salsa


-2 Tilipia fillets (serves 4)
-1 cup sweetened coconut flakes
-1/2 cup almonds sliced and blanched, crumbled
-a pinch of salt and pepper
-flour and egg


-On a large plate spread out flour dip fish in flour, then dip fish in egg batter.  On a third plate have coconut, salt, pepper and almonds pre mixed and dip fish into the coconut mixture.  In a frying pan on medium-low heat olive oil and place fish in pan.  Cover.  Allow to cook until browned, then flip, and cook until brown and cooked.  Top with mango salsa.







Grilled veggies tomato sauce

I used my grilled veggies from last night to create a delicious pasta dish.  I used a jar of strained tomatoes (way to hot to be stewing sauce today).  Yesterday I was at St. Lawrence market and there was a vendor there selling Red Fife Pasta, which according to him is an ancient grain.  So I bought 2 servings of the linguine.  So the sauce is a follows...

Teresa's grilled veggie tomato sauce 


-1 jar of strained tomatoes
-grilled veggies 2 cups chopped
-chilli powder
-salt and pepper
-1 red onion 
-1 tablespoon balsamic vinegar
-3 plum tomatoes chopped
-1 clove of garlic


-heat oil in pan sautée onions.  When onions soft add strained tomatoes, then all other ingredients and simmer.  Serve over pasta.





Grilled veggies

Last night I was in heaven, I was at a friend's house and I got the opportunity to BBQ.  I had prepared everything before heading out, so that it would be mess free, I forgot to take pictures.  I headed to St. Lawrence Market, and bought lamb burgers, beef burgers and chicken.  For veggies I bought corn still in husks, red, yellow, green and orange peppers, zucchinni (yellow and green) and portabello mushrooms.

I marinated them in 1/3 cup balsamic vinegar and 2/3 cup olive oil with a pinch of salt and pepper and dried rosemary crushed (1 tablespoon).

I cut my zucchini lengthwise (looks like a slice of bacon)  The BBQed one medium for 10 minutes or until cooked.  I served with the amazing lamb burgers.  The left overs I will use to make pasta sauce.

Spicy Summer veggies pan fried

This was incredible and contained local ingredients in season.

T's Spicy Summer Veggies

-1 small chopped onion
-1/2 red pepper sliced 
-2 handfuls green beans tips removed
-1 medium carrot chopped
-1 small zuchinni sliced like coins
-olive oil (1 tablespoon)
-1/2 tablespoon butter
-pinch salt
-pinch of pepper
-1/2 tablespoon Chilli Powder
-grated Danish Fontana Cheese (1/4 cup)

In a small frying pan combine oil and butter then add all veggies.  Stir fry for about ten minutes and stirring occasionally.  When the zucchinni start to brown add a pinch of salt and pepper and sprinkle with Chilli powder.  Continue to stir for a few more minutes.  Then add the grated Fontana cheese over top.  Once melted serve.








Crusted Chilli Chicken

Tonight for dinner the kids wanted chicken (big surprise).  I made the chicken crusted with chilli powder, sticky rice and pan fried veggies.


Crusted Chilli Chicken


-4 Chicken Breast boneless and skinless
-the juice of one lime
-green salsa (about a tablespoon per breast)
-1 tablespoon Chilli powder 


in a casserole dish place chicken.  Squeeze the juice on one lime over the chicken, and sprinkle a  pinch of salt and pepper over top.  Apply a light layer of salsa over each breast (I used green salsa, I'm sure red salsa would be amazing too).  Then sprinkle Chilli powder until each breast is covered.bake in oven at 350 for 35 minutes

Baked Applewood Smoked Cheddar Cheese Macaroni

So this meal was delicious and was comfort food.  It has a hint of smoke adding to the complexity of the dish.

Baked Applewood Smoked Cheddar Cheese Macaroni

-4 tablespoons of butter
-4 tablespoons of flour
-2 cups of milk
-1 cup applewood smoked cheddar
-2 cup old cheddar cheese
-pinch of black pepper
-1 tablespoon Parmesan cheese

Breadcrumb Topping

-4 tablespoons breadcrumbs
-4 tablespoons Parmesan Cheese
-2 tablespoons soft butter

In a sauce pan combine flour and butter on low heat, stir together to allow the butter to melt to and slightly cook the flour.  When the combination is completely melted add the 2 cups of milk, parmesan cheese and stir frequently with a whisk to avoid clumps.  When the sauce starts to thicken add pepper and almost all on the above cheese.  Reserve some cheese for the topping.

Boil pasta (Macaroni and cook a few minutes less than package).  Place cooked, strained pasta in a casserole dish and cover with the cheese sauce and stir.  in a

Breadcrumb Topping, mix together until completely mixed. Sprinkle Crumbs on top then sprinkle some grated cheese on top.  cook in oven for 20 minutes and serve.



Berry Angel Food Cake with Chocolate Flakes

This was a delicious quick dessert.  It hit the spot and took 3 minutes to prepare. I purchased the individual angel food cakes.


Fresh Berries Angel Food cake with Chocolate Flakes


-6 individual angel food cake
-1/2 pint blackberries
-1/2 pint raspberries
-1/2 cup chopped strawberries
-milk chocolate squares
(cream, ice cream or whip cream optional or zest of lime)


-on a plate place angel food cake, add berries, grate milk chocolate over top.  I poured a small amount of cream over top.  But you can use whip cream, cream, or ice cream.  For added freshness use the zest of lime.  I used Ritter sport milk chocolate squares, but you can use dark chocolate or white chocolate.

Cottage Cheese Delicious Low Fat Breakfast

I just made the most delicious breakfast and it is low fat and ready in a few minutes.  I had some trouble capturing the photo in the right light.


Teresa's Cottage Cheese Breakfast


-1/2 cup of cottage cheese 
-a handful of pomegranates
-a handful of washed raspberries
-a handful of washed blackberries
-the juice of 1/2 lime


In a bowl add all ingredients together and squeeze the lime on top.

Carrot, snow peas, orange pepper and orange slices salad with sesame oil dressing

I'm trying to stay healthy and encourage vibrant colours with my kids food choices.  
I made a delicious fresh salad.

Carrots, Snow Peas, Orange Pepper, Red Onion, Salad with Orange slices 
and a Sesame Oil Lime Dressing

2 large handfuls of snow peas end removes and sliced
2 medium carrots sliced
1/2 red onion minced
1/2 orange pepper sliced finely
2 oranges cut and sliced so that sections are removed

Sesame Lime dressing

-1/2 teaspoon sesame oil
-1/4 cup olive oil
-juice of two limes
-1/2 teaspoon soya sauce
-1/4 teaspoon freshly ground black pepper

Combine all ingredients and make dressing.  I would have added
cilantro and bean sprouts if I had some.  Allow dressing to sit with salad 
for a 10minutes to allow flavours to infuse and top with 
sesame seeds or sunflower seeds.



Oven Roasted Brussel Sprouts

Oven Roasted Brussel Sprouts


-1 pound Brussel sprouts trimmed, washed and cut in half
-olive oil
-1/2 teaspoon chilli powder
-salt and pepper to taste
-1 small onion chopped
-half an orange pepper


Preheat oven to 400F.  On a cookie sheet place brussel sprouts pour olive oil over them until lightly coated, mix in onion and peppers and evenly coat the mixture with chilli powder and salt and pepper.  Cook for about 30 minutes, stirring frequently as to brown the brussel sprouts.


So delicious and amazing.

A quick and easy dinner: Cheese, fresh fruit, crackers, baguette, 
pickled vegetables and prosciutto.

Takes a few moments to put together, no cooking required.
Enjoy with a full bodied red wine.

Smoked Gouda Cheese
Peppercorn Goat cheese
Brie
Swiss Cheese 
Caramelised Onion Edam

BBQ Potatoes

So this is a fantastic BBQ recipe

New Potatoes BBQ in a foil container

-1-2 pounds of new potatoes chopped in half
-1-2 tablespoons of olive oil or butter
-1 onion chopped
-salt and pepper
-red and yellow peppers chopped
-1/4 cup cheese grated (parmigiana, Swiss, cheddar, Gouda)


In a pan (I used a tin foil pan) places the potatoes, oil, onion, peppers and covered with cheese.  I used what I had available, the cheese is what made the dish, on medium high heat on the BBQ, stirring frequently.  Cook until potatoes roasted through out, pierce with a fork.  Took about 30 minutes.  To speed up partially boil potatoes.


Was amazing!
